Between Daemons and Dark Eldar

I love the dark elders Null deployment/ rapid assault feel but I hate how they're overshadowed by craftworlds

I pretty much love every God in chaos, so collecting every model in daemons wouldn't be hard

But why army has the most viable lists / tactics???

Daemons

Dark Eldar have VERY limited builds to make them effective, and end up being a tax to get Raiders for your Aspect Warriors.

Agreed, Daemons win out without question. Dark Eldar are so limited in the current Meta, though I haven't seen them play against MSU yet, only get slaughtered by Str 6 Spam or other big builds. Daemons though have options that allow them to tailor their games AFTER deployment and seeing your opponent's army. That's a significant advantage being able to bring the appropriate models to the table whenever you like and on the fly.

Demons probably, DE really have no viable competitive builds as far as I'm aware, most of the time they're taken as an allied detachment tax for Craftworld Eldar

I think people are being a little harsh on Dark Eldar.

That being said, I also think Daemons is the more versatile codex, and has more competitive builds.

Daemons are actually one of the top armies in the game right now. They just require a lot more finesse to to compete with the other top tier armies.
