You're going to need speed, and a lot of it. Battlewagons are good, trukks with MANz in them are good, bikers, deffkoptas, anything that can move fast and far other than stormboyz. Basically, when fighting tau, it's a game of "can I get to them before they kill me?", so don't hold anything back behind. Just blitz them with everything at once, leaving maybe a couple backfield units to provide fire support like lootas or mek guns.

And i wish i was joking. Orks are my first army, i know them well. I compare just my general Tau list to anything even list tailoring i could muster from Orks and i just cant seem to get even a remotely reliable list.

Battlewagons and lots of them are probably your best bet. Typically Tau have issues with AV14 until they get a melta in range, and by the time any deepstriking fusion suits or ghostkeels get in position you've already dumped off the boyz anyway.
Do not use bikers. Not even joking here. Tau will eat them apart. Ork bikers prize on T5 and 3+ Jinks on turn 1, but they have 4+ armor and Tau have a ton of AP4 weapons that still wound on a 2+. All it takes is 2 markerlights, bikers be dead.

Oh, and lobbas. Get at least a full squad of them. T7 is pretty hard for anybody to kill at range without sacrificing a heavy gun that would be much better off firing at the wagons. Have them focus down pathfinders, snipe out special drones (barrage rules ftw), and then bombard any balls of units you see be it crisis suits or firewarriors.
Lobbas are flat out crazy for the points. I never leave home without'm lol

Ah, right, didn't think about how mulched bikers would get. But yeah, lobbas would actually be best for Tau since they're likely to be bunched together inside cover.

Also, go for MSU. Markerlights affect the entire unit per use, so split your boyz up to minimize the effectiveness. Of course, with orks, this tends to be difficult, as large squads are generally better. For that reason, size 20 squads of sluggas in battlewagons are your best bet. At size 20, you can get a good number of small squads.

Also, don't bother with heavy armor. Like Vineheart said, Tau have tons of AP4.

I also hear that the burna-bomma is good against Tau due to lots of blast templates and the only true ignores cover we get in the ork codex, other than flamers. Again, though, I'm pretty sure Tau have a shitton of interceptor, so be careful when bringing it in.

Interceptor is more up to chance than anything else. Skyrays and Optimized Stealth Cadres are the main AA that Tau have, the rest is pretty much only luck based, and neither of them can get interceptor. Well, the OSC technically can but their Mirrors special rule is shooting phase only, so any Tau player that willingly fires his OSC in the interceptor "phase" just neutered himself of his own accord lol.
Personally i tend to avoid mass EWO because not being able to fire with marker support or any shooting phase rules kinda hurts. But i know people who swear by it, buying it even on crisis suits, and the moment you pop up in range from reserves they fire their entire army just about.

i prefer counterfire, but then again i play in a very, very assaulty heavy meta.

Gonna have to agree with Vineheart, bikers don't have the numbers nor the resilience without overinvestment from orks on invuln. or FNP to make them worth it, despite their speed. Markerlights just neutralize them, even with VSG coverage, and their low model/wound count means even without losing cover, the S5 spam they can put out just whittles them down.

Blitz Brigade was a good tactic against 6th edition Tau as they generally lack reliable long range AV14 killers. Now Tau have the Stormsurge which can tear open Battlewagons like its nothing. Being a player of both Orks and Tau I have to say the Ork vs Tau matchup is very heavily skewed in the Tau's favor. Even the ITC rules for the custom Stompa isn't all that great against Tau if they can fire a full volley of D missiles into the Stompa.

My ultimate complaint about orks isnt their killyness, they can murder things in a heartbeat even in their lousy codex they got right now, problem is durability.
Warbikers, MANz, and to some extent Battlewagons are the only thing we got that isnt paper. Tau without formations counter two of those without even trying, and with formations or a Stormsurge they counter the battlewagon too. And these are things they're going to have in a general list.

i'll be honest, ive contemplated selling my gakton of orks because im so pissed at their codex' state. But i know im going to shoot myself in the foot when i do that.

I wish i could offer more help, but i honestly cant think of any. Like others said, the Kustom Mek Stompa is great but if you have that he probably has a Stormsurge or some other heavy hitting counter to it.

Thanks for all the tips, I'd never faced Tau yet and was looking for tips on wat to expect and what would be best to bring. I know its not exactly a fair match
