So my local FLGS is bouncing out the starter boxes at big discounts and I picked up three of them.
So, I thought I would keep the Stormcast but upon further review of the actual models and playstyle - I'm thinking about keeping the Chaos side and adding a few chariots/Hell Cannons.
Should I trade anything? Should I stick with SC/Chaos focus?
I've read many of the tactic posts and general observations about the game as well as the new release schedules and just curious.
Should I go back and buy another boxed set and have 4 of everything???

The figures are awesome.
I can't answer the question about getting four as that depends on how much time you have to paint.
I can say the following:
1) Stormcast are a very powerful army in Age of Sigmar rules.
2) Khorne Bloodbound are awesome chaos figures, and this is the Chaos Army that I always wished we had.

Well spring break is coming up so plenty of time to paint. Just wasn't sure what to do with my local windfall.

Honestly, if you like all the models... do both Bloodbound and Stormcast!
Both are great to play and look awesome on the battlefield and, if you think your painting can stand the load, grab that fourth box! You might find yourself wanting to trade away the characters (or doing some converting so they do not all look the same), but the units for both forces in the box set are very solid. You won't have any regrets there.

Going back through and watching some games being played, I'm having a hard time fitting in the blood warriors and SC Paladins. Any thoughts?

What do you mean by "fitting in Blood Warriors and SC Paladins?"
Blood Warriors are the quality troops of the Bloodbound compared to the Blood Reavers which are the horde troops.
Retributors are the heavy troops of the Stormcast. While Liberators are roughly equal to Blood Warriors, Retributors hit much harder and can really smash the hardest armored targets.

Dark feast and standard really look strong on the bloodbound side. I'm trying to get some games in to see if this plays like I think it will. I'm a big fan of horde armies and the boxed set set this up easily for me.
I also like the prosecutors and judicators on the SC side. I'll add in the draothian guard soon.
I ended up getting the 4th box and now have very large units to get on the board like 12 Retributors and 20 warriors. Am I missing a formation to utilize these numbers?

There are several formations in Khorne Bloodbound that use Blood Warriors.
Goreblade Warband, Red Headsmen, Bloodbound Warband, etc.
I'm not familiar enough with Stormcast to recommend their formations.
However, remember formations are optional. You never have to use a formation.

Honestly I would stop buying starter sets if I were you. They're great value the first time but then they're dumbed down version of the kits and offer no options. All characters are the same, Korgorath have one position, Retributors, Blood Warriors, Liberators and Prosecutors only have one weapon option.
In the case of Retributors it's fine as they are probably the best Paladins, but the rest quickly gets redundant.

Also going to be missing the special weapons in squads - which do make a difference - and big squads of Stormcast are a little redundant unless the opponent is taking huge squads, as due to base size you're not going to get that many into b2b. I've never gone bigger than 7 with any SE unit.

All done with the boxed sets. Price was too good to pass. Like I said I will be adding other units but the lack of a comp hampers things a bit. We have been looking around and will likely use the azyr comp.

My son is a big fan of the bloodbound, but found its a pain to have multiple copies of the "unique" models, for them and the stormcast they are hard to get rid of. so I would say "keep the grunts, toss the rest after 1 copy"
