As the title says, i am not familiar with the tactics involved in the new Tau book. I have read it, but of course can not fathom by skimming the strategic combinations and tactics.
I am very well versed in the old 6th codex, so we can build from there.
I will play against a good player from my area, he has a wide variety of Tau models and expect him to have bought at least 1-2 of each the new models (stormsurge, ghostkeel)
The mission will be both eternal war and maelstrom objectives, 2000 points.
I plan to take my White Scars Gladius:
Khan, Chaplain on bike
1x Command Squad with bikes, grav, apothecary, 2-3 storm shields and drop pod
2x Ironclad dreadnoughts with heavy flamers in drop pods
6x Tac squads, half with plasmaguns, half with flamers, all in las/plas razorbacks
2x Bike squads with grav
2x Devastator squads with grav cannons in rhinos
and
2x Stalker
1x Hunter
One question is the viability of the Ironclads, can they stand the Tau interceptor shots? If they do, they can possibly wreak havoc. Or should i opt for a second command squad and more bikes?
So what should i watch out for? What are the more competitive builds? How do they work?
Any tips for deployment, to go first or second etc???

The ghost keel formation bonus is that their ranged shots hit rear armour so any dreadnoughts are in for a rough time (rear armour 10 makes them easier to blow up than a rhino).

Imho, How about putting the Command Squad on bikes? Since they are taking the grav weaponry. If you want to put them in the free droppod, I suggest taking 4 meltas, especially seeing you lack of melta weaponry.
Moreover, if you worry about Dreadnoughts not surviving the interceptor, just drop them and take a GravCenturion w Landradier DT, instead of two dreads and one of the grav Devastor. And put the Chapline with Hunters's eye with them.

Any decent Tau player who expects to play against White Scars Gladius will expect Grav weaponry (our biggest weakness). To mitigate this, we have two strategies/ tools we can employ. 1) Go first and leave his grav exposed in the middle of the board and 2) Void Shield Generator. The latter encourages the Tau player to "castle up" and hide in a small portion of the map, but renders almost all of your weapons completely useless. Drop pod meltas are a good counter, but can easily die to targeted Interceptor. My recommendation is to actually keep at least one Dreadnought in your list to act as a distraction; the Optomised Stealth Cadre bonus to shooting rear armor ONLY works in the shooting phase so an AV 13 walker should survive the Interceptor or force him to waste the shots of a Nova'd HBC. If you use your single dreadnought with that in mind, he'll do exactly what you want him to do.
Now on to other tips, you will lose models like crazy. Tau is really good at killing anything t6 or AV 12 and lower which is all you have. Fortunately, you have a lot of units to spare. PLAY THE MISSION. Everything is OBSEC in your list, go find objectives and laugh as you start gaining an insurmountable lead on your opponent. Next, don't be afraid to assault with Khan into anything except for Riptides and Stormsurges. His AP 3, Furious Charge, and possible Instant Death will make crisis suits and ghostkeels weap.
One last thing, don't shoot Ghostkeels, permanent 2+ cover and pseudo invisibility will make your grav super ineffective.
