I hear that right now, Tau are one of the most competitive armies out there. And my friend, just HAPPENED to pick them to get started with 40k.
Even though we're just playing casually he's playing like its a pro tournament, so I need to do the same.

So of the three (Green/Death/Ravenwing) which would be most competitive and best against his very shooty tau list?

Thanks in advance.

Tau are the anti raven wing as they can remove jinking they also have a lot of AP 2/3. A lot depends on what he takes but off hand I say green with hand to hand is good.

2000 6000 with Reaver Titan guard 2k
2500 (imperial force)
2500 (trimming down in 8th)
TS 30k at 5k points
Yes I have a problem

Tau can counter Deathwing and Drop Pods pretty hard as well with all their Interceptor on AP2 weapons. I wonder if MSU Ravenwing would be the best bet, since he won't likely have enough markerlights to zap enough guys to matter. The survivors will hit those Tau very hard. Any way you go I would recommend plenty of Grav weapons. Riptides don't like grav weapons.

My armies (re-counted and updated on 11/7/24, including modeled wargear options):
Dark Angels: ~16000 Astra Militarum: ~1200 | Imperial Knights: ~2300 | Leagues of Votann: ~1300 | Tyranids: ~3400 | Stormcast Eternals: ~5000 | Kruleboyz: ~3500 | Lumineth Realm-Lords: ~700

Ravenwing are by far the most competitive way to play this codex and against Tau is no exception. Bring a few Typhoon land speeders to zap his pathfinders. cast Invisibility. Outflank six black Knight units on turn two. You have options.

Practically every Tau unit that matters has Interceptor. Why would you want to outflank at all? So they get a free turn of shooting at your bikes with minimal cover?

no that would be dumb. The point is you have options.

Outflanking is obviously not a good option so why bother presenting it as such?

I'd run Ravenwing MSU units with lots of grav.

Raven wing and death wing both have good options for having your whole reserve team come in at once, which limits the amount of damage interceptor can do.

Ravenwing is still the best choice, grav or plasma? Both full of ap2 goodness.

A 3 man bike squad with 2 grav guns and a combi grav is around 120pts. You can take a lot of small, punchy units. 9 grav shots in the first round of shooting. multiply by 10 units = killy death for tau
