So I pretty much have my imperial guard army list ironed out. Its at 2000 points and has 2 leman russes, a manticore, a big autocannon gunline, fortifications, and 3 units of chimera mounted veterans. For anti tank, in its current configuration, I have a unit of 3 lascannons hiding in an imperial bastion, a storm trooper command squad with 4 meltas, 2 stormtrooper squads with 2 melta each, a melta vet team in a chimera with 3 meltas, and a vendetta with 3 tl lascannons. Would I be better off taking the vendetta as a Valkyrie with rocket pods for more anti infantry, or would that gimp my anti tank capabilities?

I wouldn't worry about anti-tank. Tanks suck. But I would have a plan to get rid of Imperial Knights. In this way, I'd dump the static anti-tank and go all mobile if you could. Vendettas burn down knights pretty well. And you can dump the melta guys off as well on an unshielded side.

I play mainly against some friends, and fortunately for me, none of them plan on getting imperial knights, so I don't have to really consider plans for fighting them.

IKs aren't even that great. They have side armor 12 and only 6 hull points.
Most tanks are easily chipped out by S7, so I'd say bring plenty of autocannons.
I think the Vendetta is more useful in general than a Valkyrie.

I'd keep the Vendetta because most of your anti tank weaponry is off the board for at least 2-3 turns. Your list is similar to mine (less Scions, more veterans) and even with 9 meltaguns and a Vendetta I still sometimes have trouble cracking a wave of incoming vehicles. If you're gonna run Scions, invest in a com relay, you NEED those guys dropping in turn 2.

Unless you're using the Valk as a transport, it's firepower as a gunship is pretty underwhelming against anything but basic infantry. The Vendetta is great against so many different targets, and it can make up for your lack of AT firepower in the late game if it's still alive.
Let's just hope after next week you're still allowed to use a Vendetta...

The Valkyrie only ever did one thing for me - it would fly around and eventually hover letting my flamer PCS or plasma CCS disembark, then it'd be shot down.
People can't resist shooting a flier in hover mode. It's a great way to get many opponents to waste some AT guns on something that has now completed its use - delivering troops to a useful location. For a laugh you can make it hover in cover so that it might even shrug off a few shots.
