So I want to start playing again and fell like the Eldar are the army that most catches my eye.
I was thinking to go with something like this:
1 Farseer with jetbike and singing spear: 120pt.
5 Windrider Jetbikes, 3 scatter lasers: 115pt.
5 Windrifer Jetbikes, 4 scatter lasers: 125pt.
1 Crimson hunter: 140pt
tot: 500pt.
What do you think?

While I'm sure many will say bringing a flyer at 500pts is stupid, I love it. Very Siam-Hann, and I think much better than a tank. But do be careful about it flying off the board, even with it's unique maneuverability.

So what would those ones say to be a better choice? Walkers? I despise the models and don't plan to use them later on (I plan on expanding to 1850 someday) and thought the flyer might just be a way of balancing without going OP as fudge

A lot of people like Fire Prisms, or heck even Wave Serpents with Bright Lances.

I like the look of this list. What I would say (and do take into account my own relative inexperience) is break down the biker units into two units of three and one unit of four. This will allow you to be even more mobile as you have more units to bounce around the table. In addition it means that if you put the farseer in the unit of four you wont have to worry about dropping below 25% and requiring heroic morale.

If you're against the wave serpents consider brining two vipers with brightlances. Not the most competitive choice but the buggers will be on turn 1 and will be incredibly nimble all the while fitting the theme of Saim Hann.

Just as an aside - a LOT of people dislike the war walker models. Forgeworld has some models called "wasp assault walkers" which are identical to war walkers in terms of size and loadout, but they look WAY better. Not saying you should include them in your army or anything, just pointing out a good alternative to check out  because I hate the look of walkers too.
As for expanding into nimble units:
Warp spiders
Swooping hawks
Vyper jetbikes
Wraithknights
Seer council on jetbikes
Pretty much any tank in the army.

The list is great for 500, you have mass fire power from the bikes for anti-infantry and the high strength, low ap brightlance shots to deal with terminators or other vehicles.
My only suggestions would be this:
Farseer on Skyrunner
3 Windriders with Scat 81
3 Windriders with Scat 81
3 Windriders with Scat 81
Crimson Hunter 140
- 498
This is making the most out of the unit size. By having 3 smaller units instead of 2 larger ones, you get better maneuverability, better objective secured coverage, more units for your opponent to make jink and it makes it so you maxamize the potential in unit shooting (by not wasting any shots from shooting 5 bikes at 3 marines instead of 3 bikes and then 3 bikes shooting at another squad or can shoot at the same one - it has more options).
This new list has one less bike but 2 extra scatter lasers (thats 36 shots instead of only 28).
