So I'm new to x-wing and just managed to win two games last night with this list:

Han Solo
Falcon title
Engine upgrade
Luke
C-3PO

Poe Dameron
Autothrusters
R2-D2
Lone Wolf

What's the best approach here? I can see a lot of tactics articles about squad builds and deployment but not so much about actual strategy during the game. My thinking in both games was to fly Han round the edge of the board using his turret, with Poe beng sort of a flanker down the middle. I'm not sure if this is the wrong way round and Han should be in the middle with Poe trying to hold back? I had turns in both games where Poe got ganged up but Lone Wolf was turned off because the Falcon was too close. Poe died in one of those games but managed to soak it up in the other. It seemed to me that people were ignoring the Falcon and focusing on Poe, which meant that the Falcon's trip around the board threatened to be a trip out of being in range. When I turned in back towards the centre, especially as a large ship, that's when I got too close to Poe.

What's a good general plan of attack with this kind of two ship list?

If you've found that Lone Wolf on Poe is kind of a liability, then go ahead and try something else.

Suggested list:

Han Solo
Predator
Falcon Title
Engine Upgrade
Luke Skywalker
C3PO

Poe Dameron
Vateran Instincts
Integrated Astromech
R5-P9

Poe gains the ability to regen without restricting his maneuver dial (R5P9 > R2D2 on Poe), and the integrated astromech gives him that extra boost to survivability.
Predator on Han rounds out your standard Fat Han build.
If you want to switch out the VI for Lone wolf, you've got the points to do it.

I'm not sure yet whether it's a liability or whether I've just not been playing it correctly. Possibly I should be deploying the two ships further apart and pincering the enemy in from the flanks?

Spreading out is a must with lone wolf, but stick to set lanes of travel. If you pincer, there will be 1-3 turns where you won't have lone wolf.
