When modeling Thousand Sons rubric marines, is it necessary to use the Egyptian looking helmets?

Ahriman doesn't have one. He basically has the Tzeentch horns that are also modeled, e.g., on chaos champions of tzeentch.

Can thousand sons be modeled with those also instead of the Egyptian helmets?

If they're lead by a Sorcerer and they have AP3 bolters they're Thousand Sons. How they look is entirely subjective, I think horns may be odd because they're all non-mutated dust automatons but they're your models.

3000pts Blood Angels (4th Company) - 2000pts Skitarii (Voss Prime) - 2500pts Imperial Knights (Unnamed House) - 1000pts Imperial Guard (Household Retainers)

2000pts Free Peoples (Edlynd Fusiliers) - 2000pts Kharadron Overlords (Barak Zilfin) - 500pts Ironweld Arsenal (Edlynd Ironwork Federation) - 1000pts Duardin (Grongrok Powderheads)

Wargaming's no fun when you have a plan!

Fair point. The sorcerer definitely could have tzeentch horns, though, no?

You can model your guys however you like. Whatever looks good to you.

However I do think that those helmets are the most distinctive feature of rubric marines, and look too awesome to remove. It's your call, but I'd keep them at least on the basic marines.
Squad leaders/characters on the other hand should be a bit more unique, and can always afford to look different.
