So, i'm sitting here thinking and pondering, There is a bunch of armies I want to play because I like the models, But I cant play them all.. So i decided to ask here! I'm thinking of either building up my handfull of Orks to a big army, Or building a Adeptus Mechanicus army, Or a Grey Knights army, Or maybe a Tyranids army.. But.. What one is the most fun to play and to face?

Orks are fun, but you need to ask if you don't care about winning and are willing to spend a lot of time moving armies. Same with nids, though they've less scratch build opertunities. Grey Knights aren't bad, but aren't good either, but aren't too expensive. I hear they're hard to play though, and I wouldn't suggest them as a starting army by virtue of them requiring a lot of foreknowledge from their player. Admec I don't know well enough to comment on.

AM are pretty good, and have a pretty decent army list. They are virtually an all-shooting army, though, so if you have any plans for melee, they're not what you want. I don't play them, but I'd rate my games against them as fun.
Tyranids aren't very good, and I've played against them quite a few times. I'm not sure how I'd rate them in the fun department. They have tons of models, generally, which makes transportation a bit annoying. And their large MCs generally have gigantic wings and tentacles and things, which makes transport even trickier. They also lack a lot of fast options, other than some deep strikers, so in my experience they're generally just a bunch of bodies running across the table.
As an ork player, I don't like playing grey knights. I just don't find it very fun. GK are generally decent, but have very few units that hit really REALLY hard. Plus, it seems like every GK army is the same - 2x dreadknights, terminators, librarians, purifiers, interceptors. Maybe it's a little different for a non-GK army.
Orks are also not very good (like nids), but I still enjoy them. They have a great variance of units and army types. They're fun to build and make your own stuff, have some great models. I think what I like best about them is I never play the exact same list twice. There's usually two squads of boyz, a warboss, but the rest is whatever I'm feeling like at the time.
You can play as a big blob like nids, or you can load everything up in trukks and bikes, take an elite army of meganobz, or load up a bunch of shooting units, all-walker armies, or any mix, really.
I find orks fun to play, even if they're not top tier. And people generally enjoy playing against orks, too.

I'm not realy to fuzzed about winning. I lose more then I win even if I play stronger armies as I'm not very good at the game, So I just play to have fun ^_^
Nids have cool models, From little annoying gribblies to big monster gribblies.
Grey Knights are the coolest looking marines.
AdMech have intresting models that look quite unique in the human armies.
And Orks.. Orks just have awesome fluff.. xD And some cool models too. And hearing they have more variation possible in the lists, With you being able to bring annything you feel like after the usual two units of boyz, Maybe I should try to focus a bit on them. They seem fun ^_^

This is entirely dependent on who you play against and how you plan on playing 40K.
No matter how little you care about winning (I don't as well) if you're going to do tournaments, getting demolished will get old. If you're going to play pick-up games against strangers at the local store and the local environment is hyper-competitive you'll get demolished etc.
So, who are you playing with? If you have buddies to play with who are similar interested in other aspects than winning at all costs....do whatever floats your boat.

No no, No tournaments. I dont even go to friendly tournaments as I dont think I'm good enough at remembering the rules correctly (And thus look in the codex and rule book a lot). No, I just play with friends in the local gaming club where everyone knows eachother. No strangers, Just friendly games among friends.
Lets see if I can remember what the most active players got for armies... 2 Chaos Marine armies, 1 Chaos Daemons army, 1 Khorne Daemonkin army, 1 Imperial Guard army, 1 Tyranid army, 1 Vanilla Space Marine army.. And then one guy who is just starting out plays Eldar but he dosent play often and dont have many models yet. Then we have 2 players who dont play very often, One has Vanilla Space Marines and Eldar (But he dosent play his Eldar anylonger.) And one has Orks and Necrons. But primarily plays necrons.

Orks are most commonly known as the most fun army, to play with or against, and I can confirm it's true. Their randomness makes every game laughable. And while they're not too good, when you get 20-30 boys into melee and roll 100+ dice for attacks, you'll feel great. (I don't play orks my best friend does but every game is absolutely crazy and we laugh the entire way through)
I considered Admech myself, but didn't go for it. A buddy of mine will soon be building nids. I don't know much about Grey Knights. I play tau rarely and inquisition, or inquisition+sisters mostly now.

Nids are loads of fun to paint, great fun to model and kitbash, and are a blast to play in fluff-friendly games. If you're just playing for fun and your friends will agree not to run tournament lists, Tyranids are fantastic. If you like being the thing that goes bump in the night, Tyranids are great, and their wide-open fluff allows you some serious room to play if you like writing backstory.
Orks are fun. They just are. If you're in love with the fluff, creating a crazy Ork warband is an amazing experience. Do you have a desire to model vehicles (or even Tyranid creatures lol) but prefer the Ork fluff? Not a problem. Orks love to loot even more than the Bloody Magpies.
As someone who started gaming with friends who mostly played SM/Eldar, I've never regretted my first armies being Nids and Orks. People love to play against the big bads.
