So, many of you may have seen my previous 20 posts asking for information about armies. Now I'm going to boil it down to one post, asking for advice about armies across the board. I will straight up say that I have little to no interest in Dark Eldar or Tyranids, just not my thing. I will give a list of what I'm looking for, and hopefully some of you lovely peeps will offer advice and help me choose.
1. I like melee, and big mobs of guys, but I realize how important shooting is.
2. Terminator armor, Dreadnoughts, leman Russ's, Ork infantry, guardsmen, and power weapons
3. I like the "quantity has a quality of it's own" idea mixed with super elite infantry, like GK or Inquisitors.
4. I don't mind losing, and just cause the codex isn't good now doesn't mean the 8th and 9th edition ones won't be.
5. I'd like the option of an Imperial Knight, but that's some major points.
6. Like most people in this hobby, I like to roll dice. A lot of them.
7. I plan to write my own fluff(even have an idea for Orks who think they're space marines)
8. I'm not a lucky dice roller, so the more the better, or the better the chance.
I like Orks, Blood Angels, Grey Knights, Space Wolves, and Astra Militarum.

Just go generic Space Marines. They can do everything, get a bunch of cool toys, and you can literally try out each different Chapter Tactic until you find one you like. Plus, you can write your own fluff.
I don't know anything about the current game/allies situation etc...but this screams an Imperial Guard force with allies such as inquisitors/grey knights and the occasional superheavy tank/knight added in.
That being said, no idea if you can do that in the current game.

So, I've decided, I'm going to run a C:SM army based around the Skyhammer annihilation force, and another army of Tau. I already own what I need for a 1000pts of C:SM, but I wanted some advice about Tau. I've read through the codex a bit, and I like them a lot, but I've only ever heard people talk about using is Riptides. The units I like the most are Fire warriors and Crisis suits, the giant suits don't appeal to me as much. Any advice on building a Tau army focused on Fire warriors and smaller units?

Honestly, this screams KDK to me. Lets go through it point by point
1. Melee- KDK is almost entirely melee, and good at it. It also has some decent shooting options in the soul grinders and forge fiends. Plus CSM tacticals provide lots of that.
2. KDK has Termi armor, and if you want dreads we have maulerfiends and helbrutes which are both close to the playstyle.
3. KDK is definitely Horde (cultists and bloodletters) and super elite (khorne lord on a juggy, daemon princes, doggies, and greater daemons)
4. KDK is upper mid tier to lower top tier so you will have a fairly competitive book, plus its real easy to take some of the worse units to tone it down for playing more friendly games.
5. Renegade Knight and Kytan Daemon engine are both basically imperial knights.
6. TONS of attacks on the charge. The only thing I can think of that will have more is ork boyz in a full mob. Wait until JUST your daemon prince is rolling 7 attacks on top of all the other goodies you can charge with. Plus super high WS on most units makes for lots of hits and therefore lots of wound rolls. 7. Write whatever you want, you can really do this with any army.
8. Like i said above, lots of dice
I know you said mostly imperium armies but just think them over. I am at about 1500 points with mine and am clamoring for more. They are a blast and a welcome change from my Admech army.

What did they say about them? Out of curiosity. I find them extremely fun and competitive. The only downside I can find is that they have a few crap tier units in the book(warp talons mostly)

People have just said they're a week codex, and are hard to learn. My biggest fear with them is painting them, but that's more of a challenge too. I do love me some Khorne Berserkers.
That is simply not true. They have a newer codex and do well in competitive play. However I thought you said you didnt mind about the competitiveness of this army?
Anyways pick what interests you most, I just didnt want you to have the wrong impression about the army.

Oh, they interest me, to get me wrong, but I've had people sell them to me as a sinking ship. At this point, I've had BA, Orks, and KDK all sold as sinking ships though, so everyone has opinions. They look amazing, and Khorne is one of the best gods, plus eventually the BA are going to join them. I think it would be perfect because I want to make two armies, a melee army and a shoosting one, so KDK and Tau are polar opposites, which is perfect. Any advice on what to pick up first for KDK?
