I'm at that point where I am trying to decide on my next army project (Got rid of all my 40k) I can never decide on what I should do. I've been looking at Tau, Tyranids, Nurgle Marines/Daemons, Skitarri and your standard SM.
I always struggle to decide and be happy with that decision. Anyone got the same problem and have a suggestion?

Disclaimer: It's possible this does not apply to you.
My suggestion? Pick the army you like. Codex, meta, etc. be damned. It's highly likely that some army in this game appealed to you initially - probably the army that got you interested in the game, got you playing etc.
If you don't...honestly I'd suggest moving to another game or you'll be chasing a ghost. If you're solely looking for a competitive list, don't know what to tell you. Any army is a lot of money/time invested (much more so if you set a goal to actually paint it). If it doesn't really appeal to you this becomes way more difficult.
If, at the end of the day, you realize you don't really like/love any of the armies? Consider switching games for a while etc. Don't keep throwing money at things you won't keep...it's an endless cycle which won't benefit you much in the end.

With as much time/money as you have to put into an army, I'm not sure how one could really be indecisive (short of making a bunch of 500 point armies, or people more interested in modeling than gaming). It is a bit annoying trying to pick something when you have to buy additional Codexes for specific rules, so maybe someone at your LGS can help you with that.
I started with Orks and have recently been building a Skitarii Army, but that is because I like the differences in style. It has been nice to move from a horde focused faction, as I'm not staring at 30+ models that need finished, but I am still fond of the green skins.
For me I went with something that seemed fun to play first and foremost, and I wanted something outside of Space Marines for my first army. Your choices cover a bunch of areas with Robots, Aliens, and SM, so maybe it would help to decide on a play style that you find interesting (shooty or assault, horde or special units) if no particular race is a deal breaker. Space Marines allow you to build first and choose a Chapter later, so that could be one option. It would also allow you to ally with something else too if you end up with another faction from the IoM. I kinda went the opposite route with Skitarii, but I plan on building a purely Ad Mech Army with the War Convocation Formation. Good luck!

Get some friends to let you proxy models to test run the army a couple times, get a better idea of what you want. Search out potential playstyles for the armies and see if anything jumps out at you.

Personally there isn't a 40k army that I wouldn't collect.
Some might need a bit of a creative approach to get me going but generally with enough fluff, painting and conversion ideas I'd be happy to plug away at anything.
If you've already got an army or two under your belt try upping your game, pick a theme and do a really nice job on something a little different.

Well I am not so much indecisive but have a low boredem threshold. CSM is my primary army but when I get, inevitably, bored I switch to a reserve army either DE, R&H or DKoK. I appreciate that wont be viable for everyone due to the fairly prohibitive cost.

Are you finishing or have you finished these armies both in terms of collecting and painting?
That's the key for me is to get the project done.
Once you have a few armies finished it's actually fun to add a toy to whichever you fancy every now and then.

@Alex, me? Heavens no. Got the collecting part sorted but with the hors I work and commuting I have very little time to assemble and paint. If I could proxy units with their respective box of models with dust on then I would be fine : )

If you played tomorrow, what would you want to show up to the table with? What model or models do you want to hold up and shout 'I did a thing!' when you finish them? Kneejerk reaction or the first army you put in the list of choices, start that one. Meanwhile, collect all the others too because why not?

Honestly having played IG, DE I wanna try something a little less shooty, I mean I dont wanna go all out melee focused. But Having a IG gunline and DE venoms, raiders, ravagers I wanna steer away from All out shooty and look at some all round combat. Tau are my favorite looking models by far but the lack of melee is just something I dont fancy doing again. The idea of proxying models and just having a play around seems to be a good idea. I dont wanna be competitive tbh, as I wanna concentrate on making it look good on the board and having fun with it. Psykers would be a big plus also having not much time using them.

Sorry I answered it in the most basic terms.
My most recent army was DE basically Venoms, raiders with re-rolls, and ravagers. Plush a beast pack with the baron. stopped playing before the new ed.
Erm more of didnt have time tbh, had other things I was enjoying more at the time which I put over it. But a friend of mine wants to get into it and I still have some buddys who play so.
I also has a IG gunline so wanna steer away from predominantly shooty armys. Something with psykers and also has decent saves and CC options. Competitive armys arent really my thing, stuff that looks cool and is fun to play is my idea of fun

Not a fan of Grey knights, weirdly because I had a friend who played them and he was just so QQ. Now I have a sour taste in my mouth whenever I see them.

Play CSM, you have a lot of variety and options.
My collection is tzeentch, kdk, and alpha legion. Each plays very differently, and I often mix and match differences pieces, such as my tzeentch knight, tzeentch oblits and sorc, with alpha legion marines and cultists.

Sounds to me like you made an impulsive decision getting rid of your army because you didn't feel like playing or didn't have time at that time. You failed to consider that you might want to start playing again in the future and just got rid of everything.

Select 2-3 armies that you like the fluff and look of the models first then narrow it down based on playstyle of that army. Also figure out what it is that you want to get out of 40k and what aspects of the hobby that you like. Also figure out exactly what caused you to lose interest in your original armies outside of the want to have a more meaningful assault phase (Dark Eldar have a fair amount of viable melee options in their Haemonculus Covens type units). No point just repeating the same cycle again to fall into the same pit again.

For me, I just realized the Sternhammer detachment lets you take Centurion Siegebreaker Cohort as a Core Choice, with more centurions and ironclads as auxillary.
It has been very hard not opening my wallet.
