Hello!
I am starting to play W40K again and I decided to pick up some Tau.
I don't have all the models listed below but I plan to get them before I will actually be able to play.

I tried to do a well-rounded list for smaller games, at 1000 points.
It should be pretty straightforward, but I'd love to have some constructive criticism!

That lists looks pretty balanced. Here are some minor points.

1. The SMS on the Riptide is an odd-pairing to the IA. I would replace it with Fusion or Plasma.
2. The Advanced Targeting System is an odd choice for the dual-Fusion suit. This suit's job is to deep strike and melt a vehicle, in which case the ATS doesn't help. Additionally, you need a 6 to get Precision Shot and it doesn't negate Look Out Sir! I would drop it.
3. Early Warning Overrides are an odd choice for the dual-Plasma suits. At 1000 points, I think you're fine with the one EWO on the Riptide. Not much will be deep-striking at 1000 points.
4. 5-man foot-slogging Breachers are meh. They'll be out of the 5" sweet spot most of the game. I would replace them with two 5-man Strike Teams. Coordinated Pulse Rifles shoot things dead.
5. One Piranha with a single BS3 Fusion Blaster isn't amazing. I would use the FA slot for your Marker Drones and take Gun Drones in the Net.

All said and done, I would revise to something like this:

Commander: 2x Missile Pod, Drone Controller, Iridium Armour, Target Lock, 2x Marker Drone

Riptide: Ion Accelerator, Twin-Linked Fusion Blaster, Early Warning Override, Stimulant Injector

1x XV8 Crisis: 2x Fusion Blaster

2x XV8: 2x Plasma Rifle each

4x Marker Drones

5x Pulse Strikers

5x Pulse Strikers

10x Pulse Strikers with Smart Missile System Support Turret

2x Broadside: Twin-Linked High-Yield Missile Pod, Twin-Linked Smart Missile System

Drone Net: 4x Gun Drones

Be dropping some unnecessary upgrades, I've given you 4x Gun Drones and a second Broadside at the expense of the Cadre Fireblade. I hope this helps!

Thank you for your reply!
I will swap the SMS on the Riptide for more Plasma Rifles.
I used the last 3 points, out of 4 I had, for the ATS on the FB XV8 just because I had no idea where I could spend them on.
EWO on pretty much everthing is because I think I will play versus a lot of deepstriking units in my meta. Especially MEQ, hence the 2 5-men breachers that I would use as a deterrent from assaulting the centre of the army.
Last but nit least the Piranha: this one is more a fluff choice, since I really like the model and I am curious to see it in action.

I will try this list and then eventually correct its weak links.

Since you like the Piranha ( i do too), it might be worth the points to drop 2 Strikers and add a pair of Seekers. with marker light support you now has fast serious threat to heavy armor. It all so gives you 2 more points to play with.

Drop the ATS and you have 7, now you can give the FB suit VRT. This could come in real handy after popping a transport and getting out of assault (hit and Run)or using a run move to get closer to an objective/target (fleet)
