So wondering is there any updated, or modified rule sets for space hulk? Instead of the traditional rules, something more like zone mortalis?

Im looking at making a 3d space hulk board, but i was wondering if there were any adapted rules to play more like the normal 40k game, but in a space hulk, if that makes sense, or would zone mortalis be my best bet?

To many unpainted models to count.

Zone Mortalis is your best bet, combined with kill team rules.
Heralds of Ruin do excellent alternative kill team rules, complete with army lists and missions.

You won't get the feel of SH overwatch (controlling corridors) without substantial house rules that would completely change the nature/balance of 40k.

Combining zone mortalis, heralds of ruin and the actual SH tiles could be interesting.

can neither confirm nor deny I lost track of what I've got right now.

I was thinking of buying hiret art molds and making a modular board, but I'm really digging the rules linked.

Are those all Gucci for the current edition? Also what's the normal size game? 500 pts?

Hor KT can be played from about 200-250 pts. In a campaign, you can get upgrades to support more team members in the field and your force can increase. Its fun to start small, about 125, 150 to get the hang of the rules and get games completed in good time.

There's an image of a starship board made with HA moulds in the rules somewhere iirc.
