I have played on a few at our local store and I'm considering buying one for myself.
However, I am buying the celestial realm one and don't feel flocking the whole board with grass would be appropriate.
One of the biggest issues we have is most of the models slide down the steeper pieces, so I was wondering what people have done to avoid chipping the paint in these areas and stop models from sliding down?
Any help is much appreciated.

No madam, 40,000 is the year that this game is set in. Not how much it costs. Though you may have a point. - GW Fulchester
The Gatling Guns have flamethrowers on them because this is 40k - DOW III

That's going to be a tough call. I doubt you have the ability to felt line the bases of your figures etc.
Plastic is plastic. Plastic with paint will chip with the right amount of pressure. Maybe try some textured spray paint? They make quite a bit of it, but I don't know if it'll ruin the texture of the board itself.

Sand and pva glue on a slope, paint it dark brown and poof dirt on the side of a hill with enough grip to keep you steady.

When you say celestial realm do you mean shattered dominion? The shattered dominion board has no hills so you should be fine.
I once heard my GW manager say the RoB in stores get so often used that the natural texture wears down eventually and the hills become smoother. For models that are particualry prone to falling over I have superglued a small coin (1p) under the base for stability.

We have this issue sometimes so just tend to do the old "this model is actually here, but I'm not moving it" thing and this seems to work for us.
Of course this relies on you trusting the people you play with to not add any sneaky inches to shooting etc.
