So I get that a Wolfstar is a collection of Wolf Lords, Iron Priests, and Rune Priests on Thunderwolves, or Librarians on Bikes, but what it is exactly, these days?

Usually it is TWC with a Wof Lord backed by biker Librarian Conclave, the psychic power and / or other kind of buff made the already strong TWC almost unstoppable.
I think the better recent configuration of the wolf star should be the "bark bark star", around 50 Fernisan Wolves, joined by mounted Wolf Lords and / or WGBL and / or Wolf Priests, back by Librarian Conclave, Azeral (his 4++ for everyone). It is better because it contains much more models than the original "star", so your Wolf Lord get stomped on 6s? for the orginial star, it means more than a 55pts model (TWC with stormshield) must be removed , for the "bark bark star"? no worry, a 8pts worthy wolf just come to LoS, and your Lord can keep fighting with his PF or Wolf Claw next turn . A luck S shots get through your Invisibility? No worry, it only kills a 8pts wolf and we have 49 of this being along with the important characters left.

Not very fluffy but seems really strong in game

Very very few deathstars are particularly fluffy.

This one does, however, have more fur than most. So, I guess it's a *little* fluffy, hehe.

Like was mentioned people don't make the deathstars to be fluffy
