So!

After a long break from 40k I am considering getting back into it and I have an urge to make a 1000-1250 point orky list based around all things air, so their flyers, deffkoptas and stormboyz. Would it be even remotely playable? Of course I don't mind an odd bike squad, trukk boyz or other stuff, but the main gist is to have a DEFF FROM ABOVE army. Being helplessly in love with stormboy models isn't helping either.

Note - this list would be purely for fun play with friends (usually with 1000 points pairs for 2k per side battles) that don't do powergaming, so I'd be facing some Death Korps, Orks and other mildly weak opponents.

If it's impossible to pull off I'd probably settle for walker spam list or speed freekz for fun and fluffy play, but yeah - want to give the aerial stuff a try if it's possible. Note - I don't care if it uses any kinds of formations or supplements, if it works, it's good. The only limitation is that I don't exactly want to delve into FW stuff.

Hyperspace

Well, the same way you'd eat any other kind of Ork. Only the brain and parts of the digestive tract are edible, due to the algae in most of the Ork's body being slightly toxic. Cut open the skull with a standard bayonet, and dislodge the brain. Make sure that any green-tinged bits are excised. You don't want vomiting in the morning. Slice and cook in a frying pan very thoroughly. Flip the pieces every three minutes or so. When the entire slice is a very dark brown, it's ready for consumption.
For the digestive tract, remove the intestines and clean thoroughly to remove excess waste. Remove ALL of the dark green nodes. Those are highly concentrated algae resevoirs and will leave you on the toilet for hours if you miss them. Cut into sections, boil for ten minutes for sanitary purposes, and then marinate in sauce for a few hours. After marination is done, roast in a standard oven for half an hour. Make sure to serve hot.

A hilarious airplane spam list is buildable, but not very effective and needs some reserves manipulation. Just use the ork skwadron formation from DFTS or the skyboss wingnutz' sky armada from somewhere else that I can'r recall. They both require a lot of plans though, so if you just want 4 use the kustom wazmob and bring 1x wazbom 2x blitza-bommer and 1x burna bommer. As for stormboys the Vulcha Boyz formation gets you Zagstruk and 3 units of stormboys and makes them suck less. Deffkoptaa spam is only really viable in 2 variants: the MSU spam one that you can make with the ork decurion formation, and the maxed out unit with buzzsaws with an attached bike painboy and bike boss (deathstar unit). None of these are particularly powerful except for the MSU deffkoptas that may not work at that point value, none of them crumple immediately vs friendly lists.

I started thinking about this yesterday and have some thoughts for the OP.
My last game was 7000 points I put in 7 aircraft. 3 Dakka Jets 3 Blitz bombers and one Wazbomb blastjet.
Your asking about 1000 to 1250 points. So there's the question of points commitment and force structure your interested in.
3 blitz bombers and or 3 Dakka jets is in the 400 points range.
However, the Air armada my be more what your looking for at roughly over half your points for 5 aircraft. which can fly off the table and return at full HP's and Bombs and Rokkits.
A Blastjet is like 190+ points fully loaded.
I think formations may be the key to your built with a small CAD for more fast attack slots. Keeping your troop commitment down to 2 units.
My Stormboys didn't really get a chance to do anything, they were hit with Space Marine Legion artillery and shredded up to the point of useless and I have not put them in a list after that because I'm still painting them. I'm shooting for 60 to 90 stormboys. (They will be my assault units in a Shoota boys and Grots based list.)
Over all I've found the Blitz bomba to be better than the Dakka Jets due to the changes in the Dakka Jets WAAAGH plane shooting and sometimes not using a Warboss to get Da WAAAGH. I have yet to use a Burna bomba which I suspect will do really well against the TAU... (Fire warriors and the like.)

I'm not sure if i'll be much help with this

When i built my stormboyz, i was missing several of their jetpacks, so i grabbed whatever a boy would 'think' could propel him and glued it to his back. One of them has a fire extinguisher on his back.
You could easily make jetpacks for them out of anything jet-engine looking
