I have Eldar and Necrons. ~2k each... But I don't like to burn myself out too much. I am more of a newbie/intermediate player...
I am looking to have something semi-competitive, large model count, decent firepower.
Mobility and flyers aren't very high of a priority.

Genestealer cults are looking fairly competitive, and quite different to your current armies.
They mainly field hordes of cheap squishy infantry. Most of which are equipped with lots of close combat rending attacks.
Coupled with a deployment table that lets them appear right next to the enemy, ready to charge.

^ agreed. GSC is a lot of fun, and the playstyle feels more classically Nid than pure Tyranids, at least in terms of what you can field competitively. They're also a lovely army in terms of fluff, which for me is always a plus.

From what I see online, is that their codex, is quite small and limited in options.. Is that true?

I think AM is up your alley. Static gunlines, large model count, not as competitive as your other two armies, but you did want something different right?
Also, Orks. Maybe it would be nice to play something besides the chronically depressed Eldar and the stick in the mud necrons. The Orks are the only race just having fun out there. I mean, it's war and genocide, but they're pretty well adjusted surprisingly.

It certainly is smaller than the more established codexes, with only around 15 unit types. Most of the major codexes range from around 20 to 30 unit types.
However pretty much everything in there is decent. Take a look through the codex and see what you think.
