What's the best 5 man squad you can build using only the contents of the deathwatch veterans box? I also have 2 grav guns that I want to try.

If your any good at it, I'd suggest magnetizing your guys, Deathwatch can have so many options to fill whatever roll you like, it's almost a necessity. If that's not an option for you, then I'd have to ask, what do you want them to do in your army? Grav guns are nice, but a squad with frag cannons or infernus heavy bolters is just too hard for me to pass on personally.

I might do squad crull (5 points for an extra wound) and a squad of 2 frag cannons and 2 grav guns.

With an army as flexible and low model count as the Deathwatch it is best to know exactly what you want or magnetise.

Build a list for your Deathwatch that's much larger than your current force (say, 1000 points) and build towards it, squad by squad. Frag Cannons are awesome and Grav Guns are pretty good, but could use better delivery systems - also don't forget you have specialist ammunition so regular Bolters are quite effective.

3000pts Blood Angels (4th Company) - 2000pts Skitarii (Voss Prime) - 2500pts Imperial Knights (Unnamed House) - 1000pts Imperial Guard (Household Retainers)

2000pts Free Peoples (Edlynd Fusiliers) - 2000pts Kharadron Overlords (Barak Zilfin) - 500pts Ironweld Arsenal (Edlynd Ironwork Federation) - 1000pts Duardin (Grongrok Powderheads)

Wargaming's no fun when you have a plan!

Take as many Frag Cannons as you have. In this case, one.
You only have two Shotguns, so give two models Shotguns and Boltguns. (If you can't figure out a way to model the Boltgun on there, well... Figure it out.) Boltgun/Shotgun is the best stock gear choice you can bring.
For the last two guys? Well... I dunno. Deathwatch aren't particularly good in hand to hand. You might take a Storm Shield or two, so that you can buff up your defenses.
