As an ork player, I am considering the pros and cons of different models for my army, particularly the big mek with the shokk attack gun. At first the range and blast size made it seem appealing, but the unpredictability of rolling doubles seems chaotic (more so than traditionally orky ). Do any ork/ork battling players have input?

Unpredictability is so Orky I like it, not tooooo expensive I guess. I's a crapshoot but sometimes the tool you need to deal with rough units.

The old 4th ed Shokk Attack Gun was my favourite weapon from the moment I saw it. It was such a ludicrous weapon, but the buy-in was entirely optional, and on average it was still basically a large plast plasma cannon (firepower which few ICs can match).

Those days I played Orks!

It's not necessarily a top-tier comp weapon, but it's a ton of fun, and even disregarding the randomized strength/effect, you're still going to have a Large Blast AP2 weapon that can effectively deal with lots of options when it comes to tough enemies. If you find yourself regularly facing MEQ and TEQ, it's a pretty darn good choice. (I attach mine to a unit of Kustom Mega Kannons, to add AP2 blasts to even more AP2 blasts.)

My biggest challenge I find fielding a SAG is how to field it. If you field the mek in a building by himself, one krak missile to the face ends his day 50% of the time. To mitigate that, you can stick him with some ablative wounds, but thats a 60 point tax. Thats my biggest concern hen I field one. I love what it does, but its hard to make it effective.

Attach him to KMK as suggested above?

Its fun but too expensive to field really, especially since you want him to be on a bike or using MEGA armour and have some sort of squad or protective transport.

Automatically Appended Next Post:
Using him in a blob of mek guns sort of works, but then again you would probably replace him with more kustom mega artillery thingiees since these are just way more point efficient.
This isn't the edition where single expensive large shine. You will nee multiple blasts with all those multi wound models or at least have some ignore cover to kill those pesky 1 wound cover huggers / jinkers .

It's not that good but attached to a unit that also fires with ap2 (yes, a KMK squad) it can be nice and if you like the model or want to scratch build one it worths a try. I'm not a fan of completely randomness, so i only like lootas as a random unit because at least they can aim at appropriate targets. With random ap or strenght the shooting phase of some random units can be completely wasted, but a shokk attack should synergize with another unit that hunts heavy infantry. So go with a big mek and a couple of KMKs, ammo runts for everyone.
