So Sentry Pylons from Forgeworld have Toughness 7. If I were to add in a Destroyer Lord (T6), Anrakyr (T5), Lord (T5), Vargard Obyron(T5), Cryptek(T4), and Orikan(T4 unempowered) with 3 Sentry Pylons, what would the majority Toughness be since there's a tie between 5 and 7?

Quoting the BRB on Multiple Toughness Values.

If two or more Toughness values are tied for majority, use the highest of those tied values.

Great! So the whole unit becomes T7 until Orikan gets empowered then everything becomes T5.

You should read the rules for artillery unit type because you just use the artillerys toughness

For shooting you use the toughness of the Artillery unit.

Spoiler:
SHOOTING AT ARTILLERY
If shooting at an Artillery unit, the Toughness of the guns is always used whilst at least one gun remains.

For assault you use majority toughness. If you have a tie for majority toughness in assault you use the highest of the values.

Spoiler:
Multiple Toughness Values
Quite rarely, a unit will contain models that have different Toughness characteristics. When this occurs, roll To Wound using the Toughness value of the majority of the engaged foe. If two or more Toughness values are tied for majority, use the highest of those tied values.
