I can't help it, and just really like the idea of walkers. I've started designing a scratchbuilt walker, which would be the main mode of fighting for a homebrew army, and I would very much like to use them as an army. I am aware of a few ways to build an army consisting purely of walkers, without going unbound, but want to ask people here what they think would be the best option to use as an army consisting purely of walkers. And if they happen to be aware of more ways to do it.
1) Ulthwe Strike Force filled with War Walkers
2) Wasp Phalanx filled with Wasp Assault Walkers
3) Emperor's Talon Recon Company with a whole bunch of sentinels
4) Company of the Great Wolf Detachment led by Bjorn and filling as many slots as possible with dreadnoughts.
5) Other options?

If you only want walkers, you can't get much better than an army of Imperial Knights. Just pick the formation/flavors of IKs that you like and go to town.
Just don't expect to make a lot of friends...

The Emperor's Talon formation lets you have a LOT of walkers in a low points game. As in, 24 sentinels at 1000 points. So that's definitely a walker-heavy army.

Skitarii have three walkers, the Sydonian Dragoon at 45 pts armed with either a lance or a Radium sniper, the Ironstrider Ballistarius with either an Autocannon or Lascannon, and lastly the Onager Dunecrawler tank. With the Dragoons and Ballistarii you can make units of them up to 6 walkers. A formation that you could use is the Ironstrider Cavalier formation, it's two units of Dragoons and one unit of Ballistarius together. Maxxed out in numbers that's 870 pts without any upgrade, and you must enter them by a turn one rerollable Outflank. I think you'll like them.

Don't forget Chapter Ancients, the Blood Angels formation from Angel's Blade that is 3-5 Dreadnoughts, Furioso Dreadnoughts, or Librarian Dreadnoughts.

Going on what MagicJuggler said I also believe that there's a Space Wolf Formation that allows you to take a ridiculous number of Elites, allowing you to spam tasty Space Wolf Dreadnoughts with a tax of one Iron Priest (Who'll be useful anyway)
Think of all the delicious Dreadnoughts you could bring using both formations.

Well in terms of elites, csm have the purge formation which allows to bring elites as mandatories. That's 6 elites and 4 heavy slots. The command benefits won't help much but you can mix and match dreads to your liking. Although if you're not out for FW, a helforged warpack would yield better results and either way you're probably taking a warpsmith. Still, spamming murderpacks and mayham packs isn't half bad considering a brute only costs 100 points stock. You could always bring a Daemon engine pack for ranged support, because 8 S8 shots at BS5 are pretty gnarly.

When I do this, I tend to take a Flesh Tearers detachment, use Cassor the Damned as my required troops choice and a drop pod for him as my required fast attack.
Add a librarian Dreadnaught HQ, round out with a bunch of generic, furioso, death company, Deredeo and Leviathan dreads.

When Traitor's Hate came out, but Traitor Legions wasn't out, I wrote a walkerspam list for gaks and giggles but never got around to it.
It involved a Helcult (2 big fearless Cultist blobs and a Helbrute), a Helforged Warpack (a Warpsmith, Defiler, 3 Forgefiends and another Helbrute), and a Forgehost (3 Soulgrinders). Dead stompy if I say so myself.
I still feel like Loyalists have the most options for Walker armies though; a Chapter Ancients "anvil" with an Ironstrider Cavalier "hammer" could easily end up doing frightening things.

Thank you all very much for your replies, it's really helpful.
Unfortunately, Unbound isn't really much of an option, lots of people don't really accept it, so that complicates matters. Otherwise it would all be a lot easier.
My walkers aren't very large, so Knights unfortunately aren't really an option. I still have to decide on the weaponry, and how it will be mounted, so for now that leaves me with a lot of options there. The height can be adjusted as well, given how the legs work. So I have a lot of options there.
For the army, I'm currently doubting between War Walker (Black Guardian ones), Sentinels (in the Recon Company), or Dreadnoughts (Blood Angels). What do you people think is the most valid option?

Legio Cybernetica (the 30k Mechanicum variant that's allowed the Castellax as compulsory Troops)? Bonus points for not needing to design anything that looks like a cockpit in the walkers and having guns that don't exist in 40k so you have more freedom to scratchbuild the weaponry. And between the Castellax (midsize humanoid gun robot), Vorax (weird hunched-over melee robot), Artallax (jump-pack melee robot), and Thanatar (really big humanoid gun robot) you've got space to design some variations on your homemade walker.
