So i am getting into the Warhammer tabletop and i am trying to get really into the lore of many armies to see what i like the most. Buuuut me being very indecisive really doesnt help so i am hoping that some people might be able to help me
Alright, here is what i have so far.
I really love the Grey Knights, Black Templars and maybe the Dark Angels. I like the knight theme with their robes and swords so much. I love the color scheme of the black templars. The white and black really looks amazing on space marines. So the grey knights i love with their super customized armor with inscriptions and all. The dark angels have awesome robes and a lot of sword use and cool miniatures. Buuut the green really sucks. So i heard the Fallen have a black white scheme as well. That would make them pretty awesome as well.
Maybe there are others that i missed but i really need some help deciding.

The Fallen Angels have the colour scheme of the pre-heresy dark angels; which is a black-silver scheme.
If I were you, I'd go with the Black Templars as your first army: as far as crunch goes you have access to all of the SM toys so you'll be able to make quite a comp army. If you are really craving the GK look or the DA robes you can always do some conversions: DA robes body, GK helmet, BT colour scheme.

Well, the models come unassembled and unpainted, so you can realy paint them any way you want. Like Dark Angels but dont like Green? Paint them Black and White if you prefer that! There are no rules about how you must paint them.

Aesthetics seems to be an importanty concern for you and on that note, my personal favorite look among the three is Grey Knights.
Black Templars are not an excellent force among the options available as competitive builds go whereas Dark Angels have been doing exceedingly well at tournaments, better than the other two. So mayhap the Dark Angel option with the black scheme would make the most sense and please you the most among those choices in the long run? I agree, the swishing robes do look pretty cool as well.

Going primarily based off of what's competitive today will just result in annoyance later. Go with what you find cool, we have no idea what will be strong and what will be weak in the next round of codexes, nor 8th edition which is going to be coming in sooner or later.

If it's about colors, you'll want to play vanilla Space Marines with the color of your choice.
They always get a ton of great stuff and are never in danger of being bottom tier, what with being the poster boys and all.

You can play any space marine chapter with the colors of your choice. First, basically all the Space Marine chapter have successor chapters that were off shoots of their original chapter. You can make up your own off shoot chapter, use the rules of the guys you like, and paint them however you want.
They are your toy soldiers. Do what you want with them.

These are my opinions. This is how I feel. Others may feel differently. This needs to be stated for some reason.

Like the others have said creating your own Chapter is a really fun thing to do. Games workshop deliberately leave space in the story for people to use their imagination! Another thing you could do is take one of the lesser known chapters which you can then flesh out the backround for. For example there is a chapter called the 'Sable Swords' which have the black armour with white trim that you like. From their name it is likely that they are a Dark Angels or Imperial Fists successor chapter so would be quite characterful for them to have all the robes and swords which you also like. The great thing about doing this is you have more freedom about which model you use rather than being limited by the character of the well documented chapters. e.g. Black Templars hating psychic people so can't have Librarians, Dark Angels having lots of fast attack stuff etc.
