Ok here we go!
1) the AoS book is something you want to pick up just for fun/story. At least that's for me.
2) You want battletomes if you're picking a specific faction to play (two of them are just based on scenery though...) Realmgate books are used for keeping up with the main plot's story and is something you want to pick up with a friend to reenact some of the scenes from the ongoing story of Sigmar and Friends (TM)
3) So far death hasn't really gotten much love, both in lore and series wise. Their only other faction is the Flesh Eater Courts. Other than that Nagash seems to be doing... Who knows what, the story right now doesn't seem to focus on what death is doing, Though the recent Skirmish game does take place in shadespire, which is a city in the realm of death.
4) As I said before the Scenarios are designed specifically for those specific armies to clash. You CAN change the rules a bit to match the army, but really you're better off using battleplans, which is found in the General's Handbook for general style scenarios, or if you want a faction specific one, you can check the battletome for the army. These are designed for various factions doing the fighting
