If a model has two cc weapons and in their profile it's listed as them having 2 attacks, they get 4 attacks total, right? They'd get two with each weapon they have?
Also, in the new edition as pistols are cc weapons. Will a model have two attacks if they have a cc weapon, but also inherently have a pistol? And then if their profile listed them as having 2 attacks, would they get 4 total?

Don't know lol but your first question will be No, you have two attacks total not 2 atk per weapon... Probably not as the pistol can be shot in the shooting phase.

+1 for an extra close combat weapon
Negated by shields
Negated by Specialist Weapon unless both weapons are Specialist Weapon.

Nope, you get 2 attacks and your choice of which weapon to use. You can shoot the pistol when locked in HtH (during the shooting phase) so you will still get the odd additional attack there.
Generally, a lot of models actually have less attacks in HtH than they used to. Probably to balance always going first in the charge with everything.

7th ed:
2 attacks base, +1 for having a pistol and +1 if you charged so a max of 4 attacks with a single weapon. Specialist weapons only get a bonus attack if the model is equipped with 2.
8th ed:
Attacks equal to the listed amount. Pistols are the only ranged weapon that can be shot in HtH and count as a shooting attack. Melee weapons can be divided between attacks so if you have 3 attacks and are equipped with a Power Sword and a Lightning Claw you can have 1 of your attacks be a Power Sword and 2 from the Lightning Claw. Certain weapons, like the Chainsword or a Choppa, give additional attacks when used
