Please excuse the ignorance of an absolute beginner but... which decals are to be placed on a Dunecrawler and where? Am I overseeing the obvious here as I cannot find any description in the instructions?

There is no instructions in any gw kit for decal use, either go nuts and do what you like or look at the boxart or on gw's website at the model for inspiration.
