So I was thinking earlier.... In the fluff, if someone were to tip a dread over, by say ramming it with a garbage truck, how do they get back on their feet?

A fine question... and because its fluff based, I think its one entirely left up to the author.

You could say the dreadnoughts have a powerful gyro system, or techno-babble it. (IE: the dreadnought's automantic magnetomicon stabilizers kick in) You could even just write "The dreadnought quickly turned his bulk over, feeling the weight of his armored torso as his robot limbs strained to lift the war machine upright once more." and hope the reader doesn't fetch a kit and look at it closely and go "Well, that just wouldn't work."

There's one last option, and the one I would go with: have it flail around helplessly, like ED-209 at the bottom of a flight of stairs!

In the fluff Dreadnoughts can fully pivot at the waist so they'd probably spin the torso round then the legs and bench press themselves back up.

Helbrutes on the other hand could have more issues as they're now a bit to "fleshy" to spin that far. Though they maybe a bit more flexible and get up like a fat guy in a sumo suit.
