Do these stack?

My opponent charges three units into two of my units, one of which has Veil of Time active. After his first charging unit fights, I use Counter-Offensive to interrupt the sequence.
I then choose the VoT unit, per the VoT power. "If the enemy also has units that have charged, or that have a similar ability, then alternate choosing units to fight with, starting with the player whose turn is taking place."
The enemy chose his first unit to fight, so he started. Then I interrupted. Then my VoT unit fights first, after he chose one unit, per VoT.

If you are asking if you get to fight twice, then no. Unless you have an ability that specifically allows it (such as Berzerkers).

If you use the CounterOffensive to have the Veil of Time unit strike first, then Veil of Time won't do anything (as that unit has already attacked and cannot be chosen again). If you have your other unit strike first via Counter-Offensive, then it would be:
