I have had a few games now of 8th and this is kind of the direction my Grey Knights are going.

I would like some advice on what is good and what is bad about the list and any extra help would be nice on fine tuning.

SOMEbody, at LEAST one unit, should have Hammerhand. When you're limited to one cast per turn, you should always have all three powers from a tree across the board.

I'd even like to see you drop one GKI down to a 5-man and use those points to bring in a SM Libby for Might of Heroes and Veil of Time.

I agree with the SM Libby addition. I was contemplating putting one in.

Why so many interceptors?
And why do you want gate of infinity on them? They can deep strike + shunt once per game, which is basically an auto-pass, no perils, no rule-of-one gate of infinity.

I use them with gate to either cast on something else or teleport away to jump on an objective.
