Recently I played a game using a Firestorm Redoubt vs. battlesuit-heavy Tau (T'au?). At one point, the Tau (T'au?) player decided to charge multiple units at my FSR to try to kill it before I got another turn of shooting. His Ghostkeel successfully charged after taking a few wounds from the Icarus lascannons (I'm not sure where people stand in the modifiers to hit in overwatch debate, but it didn't matter, as the Ghostkeel was within 12" and the stealth drones were gone; if anything, I would've gotten a +1 from the Icarus lascannon modifier, but I digress). However, after the Ghostkeel charged, he sent in a Riptide that got itself nearly killed after some lucky rolls.

Now, the rules for every fortification in the Imperium II index states that they can shoot even if an enemy unit is within 1" of them, and the BRB says overwatch can be conducted multiple times if the charging unit fails their roll. I have not found anything specific to Fortifications in rules for overwatch, or vice versa. So, is it fair to say that since overwatch can be conducted multiple times, and Fortifications ignore whether enemy units are in B2B, a Fortification may fire overwatch for as many times as the opponent declares a charge against it?

If this is not the case, I owe a Riptide an apology for 12 wounds or so.

Well first, Overwatch always hits on a 6, no modifiers adjust that.
As far as the firing multiple times, by the letter of the rules, I'd so that you can only fire multiple times if the units previously failed their charges.
That said, I do believe it has been ruled otherwise in the case of models that can fire out of combat, but for the life of me, I can't find it.
