One of the biggest changes in 8th is doing away with the vehicle rules for pseudo-monster rules for vehicles now. Since firing arcs are no longer a thing, is it legal to model casemate guns on tanks that suppose to have turrets, provided that height and whatnot are still preserved? (like, say, modelling four lascannons into the hull of a Rhino to represent a Quad-las Pred). Same goes for the reverse, giving turrets to previously casemate models (so a Demolisher Turret on a rhino hull to represent a Vindicator). I know this likely won't last another edition if they change the rules again, but I personally like these modelling opportunities.
Another one is using non-vehicle models for vehicles, like maybe some AoS monsters for certain units (say stonehorns converted to be squiggoth "Battle Wagons")?

That all sounds pretty dope. I think most people welcome anything that makes the army across the table unique, so long as it doesn't become a huge mess where everything is a counts-as that I'll never remember.

If done correctly, and in a manor that seems like it's a good conversion then it could be cool. If done poorly because you don't want to shell out the money for a vindicator then I'm against it.
Nothing is worse than a budget conversion effort.

Considering the Predator (who costs the same as the vindicator) would be needed for the basis of the conversion (turret and all) it would cost at least as much as a Vindicator, although I was only using that as an example.
I was actually thinking of making a few Chimera-based casemate tanks, since they have the lowest profile and looks closest to the StuG (they would be used for tanks with Chimera-based sets obviously, so no low-profile leman russes or the likes).

I really can't see any problem with this. I really like how the fire arcs are gone for this exact reason, it gives a lot of freedom how to model the vehicles.

As long as the height and footprint (including the weapons, turrets, sponsons, etc.) is maintained then it makes no difference whatsoever.
For example, you mentioned a predator with four lascannons hull mounted. As long as there is some gubbins on the top and sides to maintain the dimensions then go for it.
