Here is a scenario, unit A charges unit B successfully and unit C, a character, performs a heroic intervention into unit A.

Under the rules for choosing targets in the fight phase it says "Models that charged this turn can only target enemy units that tgey charged i the previous phase."

Does that mean that unit A can only attack unit B in this scenario and can't attack you it C on that turn?

yes, that's why you should always declare a multi-charge againgst any characters that are gonna be within 3" as well, unless you can ignore their attacks.
