I'd like to build a fluffy army around Imperial Knights, but I'm at a bit of a loss for ideas. I know that the Adeptus Mechanicus is very involved with Knights, but I'm not particularly fond of the Mechanicus. That said, I'd be willing to make an IK/Mechanicus army if the lore behind it was interesting enough.

What are you guys's ideas for this? What fluff would you use for an IK-centered army?

I'd go with Imperial Guard and fluff the guard as the knight hold's "Auxillery men and arms"

Way back, there was a thing called "Tech Guard" who were soldiers who operated in/around Titans. They had magnetic boots, etc. These are the guys who fight from the fortress-boots of the Imperator Titan etc.

There is a brilliant one-page story from the early 90's about them and it's really atmospheric.

I don't know that they would have much to do with Knight orders, but it's a cool thing to consider if you ever move to the bigger resin fellas.
