I've got 3 sitting on the shelf, but when I theory it out in my head it seems like they'll just get alpha struck and destroyed T1 by the competitive lists. What are everyone else's thoughts? In a competitive meta, are Imperial Knights really that 'durable'?

They're more of a distraction unit these days, my favourite tactic of marching a crippled Knight straight into enemy lines and daring them to explode it is gone as well

They have decent durability, but their damage output is only decent if you can manage to have them BOTH shoot and fight in CC. They are also very weak to alpha-strikes. You cannot hide them in a transport or in reserves or behind terrain.

But what really kills them is mission play. You need infantry to secure objectives and to score victory points. Even if you dominate your opponent with 3 Knights you will often find yourself hopelessly behind in VP's.
