After picking up a paintbrush again and painting some models, the urge to get back into this hobby has been extremely heavy on me but I just have so many questions before I really decide to return- so if anyone could help me out here it'd be greatly appreciated!
So obviously I'm having a hard time deciding an army.
I've narrowed it pretty much down to Tyranids.
1) I'm thinking of starting with the Start Collecting! box which contains the Broodlord, Genestealers and the Trygon.
Is that a good start for 8th ed? (I remember the older box had like the flying 'nids)
2) Is it possible to have a fairly low model count? I don't want to spam hordes of little Terma/Hormagaunts (due to the time to assemble/paint/carry around etc)
Even a medium model count? Maybe focus on Genestealers and a bit of the bigger guys- but still be viable on table top?
3) How is the assembling process? (Necrons were a huge pain for me to assemble with all the small fragile parts on the Warriors etc.)
4) Any recommendations in general for collecting Tyranids?

The popular hive fleets are kraken (genestealers) jhormunghard (ravener taxy). All of them except gorgon is fine. 8th edition rewards hordes, but that can be genestealers and not gaunts.
Run genestealers up. Or put them in a wurm and swarmlord in a pod.
Put shooty gaunts with deathspitters in a wurm.
You need some long range suport often. Exochraine or hive guards. Automatically Appended Next Post: The start collecting boks is fine. Grab some more stealers and some devilgaunts. Puy the gaunts in the trygon. Use the 2x shooting stratagem to open up for the stealers.
If you want mid siced bugs I would sugest jhormunghard taxi lists.
Asembly is funn and fine.
Try cheking out the 8th edition thread. The primer is great.

A few thoughts:
1) You can certainly run fewer tyranids, but you'll likely be focusing on fewer bigger things so you'll be using some of the larger monstrous creatures. So instead of lots of small stuff its fewer very big stuff (a good few of those bigger kits are duel kits and can be magnetized to get two for one if you want)
2) Assembly is fine but MAGNETS. Warriors and anything bigger have a wide variety of weapon choices which can dictate their role from pure close combat to pure ranged and eveything in between. Furthermore edition changes can not only change what weapons are "best" but also which are legal to take.
So magnets are a fond favourite of tyranid players - they allow you not only to survive new editions but also to get a lot of variety in your models. Instead of dozens of carnifex you might only own three; changing the arm* (thus weapon choices) to suit the game your playing. There are loads of guides out there so google up magnetizing tyranids for written and video guides
3) Getting started box is a good solid choice with nothing bad in there; and since the lord is a "free" model its not bad if you get one or more of the getting started boxes.
4) Remember whilst each of the hive-fleets has an "official scheme" there is NO rule in 40K that requires you to play your armies in official schemes. Nor is there a rule that different armies must be painting in different schemes.
So paint however you want and choose to use whichever hive-fleets you want on the tabletop for your army.
* head and shoulder plate are also easy to magnetize for the carnifex

The tyranid codex makes this army quite adaptable to your playstyle. You could totally run a hive fleet with nothing smaller than a tyranid warrior.
The starter box is pretty good. You'd probably want no more than two. Personally I find it hard sometimes to fit ONE broodlord in my list, let alone two. You could always trade/ebay what you don't want from the second box. Or create a diorama if that floats your boat.
Finally as other posters have said.. MAGNETS MAGNETS MAGNETS!!!

Thanks for the tips guys- I've never done magnetizing before so this will be a challenge for me

Nids are quite awesome at this point, you really can do whatever you want and make a decent nid list. If your just looking for a fun, semi competitive list you have so many options in the big bug / low model count category.
Hive tyrants, Carnifex, Trygon, Mawlock, Hive crone, Harpy, did I mention carnifexes?
Bugs are just cool. Collect what you like. The start collecting box is a great start if you like genestealers (and who doesn't? Besides the people not playing with them that is. . .).
