Apart from snippets here and there I'm not too clued up on the AoS realms and whatnot, but I can't see the background being quite as rich as the Old World. I still read the Vampire Counts army book just for the fluff. It's so rich and immersive. Yes it's early days, and whilst I love the OTT, WWF, F**K YEAH! style of the game I can't see the background being so... I don't know, nuanced?
I am positive about the game itself though, and I am planning a scheme for a small Skaven force.

Now you are comparing AoS with WFRP. Do I love the tone in WFRP because of it's gloom and doom? Yes I do. The main characters are everyday men and women trying to hold back evil. Compared to D&D with it's bright fantasy of adventure and hope, WFB has room for much more storybuilding.
You miss a step tho - WFB. While the fluff might fit into a WFRP scenario the game itself and the way it is played has nothing to do with Drachenfels or Marienburg: Sold Down the River. In 5th - 8th edition it was a wargame, and most of the time it was about silly strong and mobile characters beating up on the not-so-fortunate. I can see you and I have a very different approach to WFB, my experience with it was as a (cut throat) strategy game and not as a storydriven game with scenarios.
When played as a story driven game there is a big difference between the settings of AoS and WFB. WFB is grittier while AoS is more like Spelljammer and transdimensional, and you have to get accostumed with that first part of the story first.

Yes, that's exactly what I'm saying. If you are not interested in Stormcast or Khorne, the new releases for AoS have been disappointing. I know a lot of people were early on voicing an interest in new AoS Elves, but now it sounds like all the elves are getting is rebased. Similar for people who are interested in Humans, Ogres, non-slayer Dwarfs, etc. I know new kits take time and money, but I think new figures is just what AoS needs if it ever to be really successful. Just repackaging the old stuff on new bases and new names isn't going to grow the game. Not the way it needs to grow if its going to have a chance, long term.
As for rebasing being not that interesting I beg to differ, strange enough rebasing alone is making me revisit and amend old minis.
I'm talking about rebasing sparking new sales (and not of just bases). If you are just rebasing the figures you already own, that's not doing GW any good. My point is that I'm not sure the rebasing is sparking any significant sales of old figures. Now, the "Start Collecting" box sets may well be driving some new sales, but that's more for the lower cost than the rebasing.

Why do you say this? I got the impression that the Wood Elves oscillated wildly over the years between 'archer elves with treemen monsters' and 'treeman army with cheap archers', never quite unifying the two themes; but why do you praise this fluff split, out of interest?

For me, personally, it's because the last book had almost all of the important bits of Wood Elfiness done as a result of a forest spirit interfering--and during the End Times they went out of their way to emphasize the spiteful and untrustworthy nature of the Dryads and some of the Treemen who had an axe to grind with the Elves(no pun intended). They were setting this up then I think and I'm really glad they followed through.
To use an example: the Wood Elf heroes Naestra and Arahan were a single child who got lost in a portion of Athel Loren they shouldn't have, a forest spirit split them into two halves of the same person.
Why? Because the child got lost in a portion of Athel Loren they shouldn't have.
It's a circular logic and emphasizes how the forest spirits are like petulant children.

But that is a different argument mate, you can say that the theme, Khorne, Stormcast, Fyreslayers and Archaon/Varanguard armies does not appeal to you and that is fair enough but we are talking about new models here and all of those armies were fleshed out from new, with new kits. So yes loads of new stuff was in fact released, unfortunately not to your personal taste.
Rebasing old models and amending them is good for GW too, one the bases are not cheap and two amending models/splitting regiments got me buying more old models, things are not as linear as you say. In fact the new faction arrangements allied with rebasing got me thinking on new small themed factions and sparked my interest in making new stuff.
I understand that people are passionate about their own factions and can be disappointing not getting new models but AoS is in its infancy, its not realistic to expect all factions to have loads of new kits in the 1st year.

Humans, Elves and to a lesser extent Undead and non slayer Dwarves would IMO all benefit from a clean break with the Old world styling of the remaining kits. But without a unlimited budget the repacks are probably going to stay around for a few years yet.

They could have started with a few models for all the factions instead of having this heavy focus on Chaos & Stormcast or Stormcast & Chaos (depending on the month). Overall it has been more or less really focused on these two armies while the the other armies got new bases and discontinued stuff. AoS wasn't just started a month before its release. They could have released new stuff for a wider (aesthetic) spectrum of factions (it seems one can mix anything so real factions are not that solidly defined) and still focus on releasing a core of Stormcast stuff. Even so most Stormcast stuff just looks very similar.
Nobody expects them to have a dozen boxes for all factions out at the same moment but they could have written a few of these campaign/scenario books for various combinations of armies and released them one or two at a month with one of two boxes for people to start working on stuff. From August 2015 till today could have been 8 small campaigns (at one a month) for 16 factions total (I don't know how many they want to have for AoS) with some boxes for everyone and also focus on Stormcast to build up that faction. And they would have fleshed out the new universe a bit more.
They could have just cut stuff as they released new similar stuff, like drop the Brets (or any other faction that survives) if they release two or three exiting boxes. It's kinda a reverse Osborne effect. Now certain parts of their customer base have nothing to buy and don't even know when something interesting for them will be released and that's people who look for rumours (just think of all the people who don't hound forums for release leaks).
I would be interested in some new miniatures (not the game or rules as they are now) but all I see in are very similar looking Stormcast and Chaos dudes (sometimes on another excessively big monster) and repackaged old stuff. Do they aim to make people sick of these two factions and then move onto another two, grind any interest into dust, move to the next two and so on until, at some point, people feel nostalgic for the Stormcast & Chaos days of 2016?

Are you serious? The answer is obvious.
Branding.
GW wants to establish a brand new setting. Parts of the old, but mostly new. They want to add a whole new faction as the poster boys, the "protagonists' and need a clearly defined antagonist. It would not do well for GW to have a largely incomplete line of Protagonists for their brand new setting.
Hence, the reasons why Stormcast vs chaos has been done so much. Also, more likely than not Khorne has been the flavor of late because they are convenient bad guys. It's easy and identifiable, but other chaos flavors are less obvious. "Wait, so those guys are just really sick? And that's why they're evil?"

Yeah, there really is no need for it. And female Stormcasts are not confirmed. Men and women get REFORGED into Stormcast Etnerals. There is no mention if they keep their sex. They are no longer normal human beings.
