This came up and I'd love to hear some thoughts.

Harlequin Stratagem Skystride let's a unit consolidate 6" towards their transport (with the option to embark, but that's not necessary) instead of towards the closest enemy.

Consolidate happens in the Fight phase Step 6.
1. Choose Unit
2. Pile In
3. Choose Target
4. Choose Weapons
5. Resolve Attacks
6 Consolidate.

Thus the question, would this strat allow you to "dodge out", "quit" or "exit" a fight before another unit (including the one you were fighting) gets picked for the fight sequence.

In other words, a Harlequin unit moves up board, their trusty transport positioned in a direction away from the enemy. Harlequins charge .. say .. some Berzerkers, do the fight sequence and, in step 6, activate the Skystrider Stratagem to move 6" away from the Berzerkers and out of close combat (and possibly into the transport) before the Zerkers are chosen as a unit to attack?

Yes, they can. The stratagem is used when the unit Consolidates, so if thy do so before an enemy unit has fought, then then enemy unit won't be able to fight them.
