The new rules mention Split Units but I swear I can’t find the actual rules for how those work, when they happen, etc. Can someone point me in the right directions?

At the end of each turn you must remove models from any of the units in your army that are split up into two or more groups, until only one group of models from the unit remains in play. The models you remove count as having been slain.

There are also some creatures that have the ability to target a model and remove it. At that point the unit would be split.

Yeah, that’s where it’s mentioned, but how do models get split in the first place?

People would spread their units across the board to get bonuses from heroes who weren't always close enough and they'd take from the middle when they took casualties, so there'd still be a dude or 2 close enough to the hero while the rest keep fighting in melee. I believe this rule is to try and stop that. However, units with 40mm bases+ can really suffer from this if the player isn't careful or if the opponent has ways of picking models they kill

It also nearly happened a few times in the game I played at the weekend, when models piled in around terrain, or to surround an enemy unit - you can end up with, say, the standard bearer on one end and the leader at the other, and then trying to remove casualties from the middle.

Yeah. It's especially bad when Morathi is involved and picks who she kills, effectively capable of killing way more than she actually did.
