Why are you going Jorm with this list?
You aren't burrowing with trygons or ravenors. You aren't spamming carnifex stars. Gargoyles are literally only good in Behemoth for the reroll strat with a flyrant or Leviathan for the FNP.
Warriors are great with Jorm, but only if you back them with a prime and a Malanthrope/venomthropes. The other option is to bring them in on turn 2 with a melee build from under ravenors so they can heavy bolter a screen and charge the juicy inards with boneswords/toxin sacs.

I’ll go back and review class. Over all it’s -1 to hit giving carnies -2. FNP seems like an overall better option.
With that being said, the update gave me 91 points to play with.
Plenty of option, but I’d like to stay away from overkill in some of the units. That and the list has a good buzz going.
Build out troop selection, or add another troop choice.

Well you wont get -2 to hit the carnies no. The only way to get -2 to hit something is a character with the -1 relic standing next to a malanthrope/venomthrope. The malanthrope/venomthrope aura doesn't stack with the carnifex -1 to hit.
For your list, your either gonna want Leviathan trait for the 6+FNP or your gonna want kronos for reroll 1's and deny psycher strat. Jorm trait gives you cover for +1 armor save, but it literally does nothing else for your list, as your not using the deep strike strat.

If you do go with Gunfexen ( HVC+Twin Brain Leeches) I personally forgo the Enhanced senses and use Acid Maw, that way I have a solid CC option if I need it.

With the extra 100 ish point, what do you guy think I should invest in?
Spore mines would add some fluff to the list. I could also add a small unit of genstealers?

Well, it kinda depends.  If you go Hive Fleet Leviathan, I'd toss in a 100 pointish Warrior x3 Brood to spread out the 6++ save. If you stay Jormangandr, a Ravenors x3 should also hit that 100 ish size, and lets one Warrior Brood Tunnel in.
With the price changes, a Broodlord adds a Character , or a Nuerothrope.....what works best gepends on what you have. Each part should add to the whole.
Personally, if I was building a Warrior based Leviathan I would likely build around Warrior x6, three times instead of Warriors x9 two times.
