I'm getting some Vallejo paints, with emphasis on getting the following things:

-khaki colours to base a sort of desert camo on
-pale flesh colours
-Greys, to highlight black and lowlight white

One big question is whether to use the model colour or the game colour range. What's the difference between these?

Model colour are mainly more natural, and the range of colours are much bigger. Game colour got much intensive colours, the range is shorter, also separated into heavy opaque, which is something like base/layer in gw products. And you will find technical paints there, like verdings etc. There is also mecha colours, prepared for Gundam-like/anime models, it's something between model and game colour (bigger range, intense colour, but no separation in base/layer).

I recommend getting what you need from each range. The Model Color range will have plenty of colors to paint a camo scheme with. Game Color has many different flesh tones including pale ones, and both have greys that should work equally well. Two of my most used colors are Ghost Grey (this is actually what I use for white instead of white itself) and Wolf Grey (which is always my final highlight for black), both from the Game Color range.

I paint primarily in VMC, but sadly, I don't think VMC or VGC are great for skin tones. GW's are much nicer.

That being said, my go-to off-white is VMC Sky Grey. Very versatile, with a slightly cool tone. Wash it to the desired color.

I highly suggest German grey from their range, it’s a must imo for black armor or grey work, it’s a darker GW eshin grey giving you another layer of depth.

The leather and metal set from vallejo is good for what you're after. I got it for Christmas before last and used it consistently through the year.

Vallejo has pretty good paint sets built around certain color schemes/effects which include all the paint and detailed guides on how to use them to get the same affect as their painters.
These can be good starting points if you are switching from GW paints to Vallejo or similar (certainly what I did)
