I’m looking to make a patrol of marines with really banged up Power Armour for Kill Team, almost to the point of looking Ork-ish but can’t seem to find any references to salvaging Power Armour.
Am I looking in the wrong place or is there a rule against salvage or something inherently inefficient in salvaging Power Armour?
I don't break the rules but I'll bend them as far as they'll go.
Marine armour was designed with a modularity.
So that it COULD be repaired by salvaging pieces from other suits.
The fluff says that pieces from other chapters shouldn't be repainted "lest you anger the spirits within" (and curse yourself with bad luck) but it's been done quite a few times in the fluff since marines became the crusading space knights from hell.

From an in-universe, representing a 3+ save perspective, unsealed Power Armour will have holes... holes that bullets can get into. That then get into the Marine inside. So if you go with damaged to the point of disfunction... it might be hard to justify. The benefits of power armour include sensory improvement, increased strength, environmental protection, and so on. From a fluff perspective, you're moving away from power armour towards (effectively) Carapace Armour.
If you look towards the Eye of Terror campaign book, and the Wolfen from within, they make mention of having to scavenge Chaos Marine armour parts to maintain their armour. That might be a place to start?
Nick Kyme's short story "Devil's Trappings" about the Marines Malevolent makes references to the scavenged, makeshift nature of their power armor and equipment. The whole crux of the story is them going on to a derelict space station so they can grub around and steal anything that's not bolted down, including a boatload of power armor off of a bunch of dead Space Marines.

A good way to make them look like they've had a beating is to take a few small drill bits, and just press them to the armor and make a few turns- you now have bullet dents. You can also get a little creative with heating a metal piece and 'melting' cuts into your armor.
Other things you can do would be to swap around some parts from Mark 3, 4, 5, 6, and 7 armors.

This is just what MK V armor is, scavenged power armor made from stuff the Legions had lying around ad-hoc. Whenever you see lots of externally exposed cabling and bonding studs, it was probably ad-hoc armor thrown together at some point. Bizarrely Deathwatch the RPG rates it as having armor equal to MK VII, albeit lacking complex functions like lots of stims due to being cobbled together. And being incredibly heavy.

The problem is once you've replaced an armour part and repainted it in your legion colours, how do you know? The only thing I can suggest is mixing marks of armour and making it heavily weathered and damaged.

You just haven't read the marine fluff with an eye on that bit then. ;-)
Because basically ALL power armor is salvaged, discounting the fresh suits a newly founded Chapter gets straight from a Forge World. A dead marine (or one who can't be set back to the fight by the Apothecary) will usually mean a severely damaged suit of power armor too. The suit and parts have been in countless battles before the present-day wearer gets to use it, and many of those times it has been pulled off a dead marine either whole (rarely) or with some pieces needing difficult repairs. One could ofc also guess that helmets and chest pieces in particular will be the oldest parts in many suits - losing an arm or leg is bad but a marine can survive it, without head or chest the guy is not coming back at all!
The only difference between salvaging your own Chapter gear and that of others is that you have a better idea of who possibly used it before and can decide that this particular right gauntlet is the one the legendary Brother Tanksmasher used to take out the enemy command tank (firing his meltagun) in the battle where he earned promotion to Sergeant.
