Just look up any historical ship deck plans.
A Galleon is in the loosest technical definition a "Multi-decked" sailing ship. The smaller ones would have maybe 2 upper decks, with the lower and more forward one having a couple ladders/stairs to get to the upper rear deck.
Note that Pirates, in the golden age of piracy, didn't really use Galleons much. Galleons are slow, and would be easily caught by the authorities. Pirates preferred to use small Schooners, Brigantines, or, if they were lucky, a Frigate. These ships can outrun anything they can't outfight and have decent cargo capacity for making off with plunder.
A schooner type ship might be between 20 and 50 ft long with typically 2 masts and only a single deck, though larger ones could have a 2nd upper rear deck.
The Black Pearl in the Pirates of the Caribbean movies is a Frigate type ship, though a significantly larger and better armed one than frigates which pirates might get. A pirate would probably only be able to get a light frigate with a single lower deck, with all cannon being on the upper deck. These might be 30-50 ft long, and 25 ft wide at the widest point. Certainly don't go with a Heavy Frigate design like the USS Constitution, no pirate would ever be able to get a ship like that and it would be far too large for your purposes.
That said, I'm sure you can find plenty of premade templates. Look for "DnD Pirate Ship map" or something.
