See I'm getting into Warhammer Fantasy and am picking up Beastmen likely soon, but the problem is, I also kind of want to be able to use them in AoS too. So does anyone have any tips on being able to switch between round and square bases?
Something efficient and aesthetically pleasing.

Dont think its particularly possible to do square and circles its going to be weird one way or the other. best option would be to just use the square bases as in AOS it doesnt matter nearly as much. but if you are willing to cheese it just a bit on size you could try and get or make these trays from LotR

The recommended round bases in AoS are usually a size larger than the square bases for WHFB. Unless you plan on playing in tournaments, just using the square bases will probably be your best bet (of course check with the group you'll be playing with first).
