I mostly just play 40k but over the years I've collected and converted a random assortment of fantasy Chaos. I'm mostly just interested in learning AoS and using what I have until I know if its my thing. Below is the 2000pt list I cobbled together followed by a list of models I have left over. First is this a legal list? Am I missing anything? What general advice can anyone give me on how this would play?

It seems like a quirk with the rules that Chaos Dwarfs can take any chaos as allies but can't be taken as allies... does that matter in a Grand Alliance list?

Grand alliance chaos means you can mix and match as you please with no penalty.

As for performance, you do have the right idea in terms of building a list with a decent balance of troops. As for how well it performs it will depend on your local meta and how powerful a list you fight against. Grand Alliance Chaos is somewhat of a weak faction but you have included several strong options, like the shaggoth and mammoth, so I suspect you will do OK provided a non-competitive meta.

I included the Daemonsmith because I figured having a sorcerer of some kind was good. His Ash Storm seems like a pretty decent debuff and I stuck him on the vortex to extend his range.

So army rule gives Legion of Azgorh wizards a fireball spell, but the warscroll for the two wizards don't list the spell. Am I correct in my reading that because I'm taking this as Grand Alliance Chaos I don't get that Fireball?

Are Arcane Bolt and Mystic shield the sort of the generic default offense and defense spell?

Grand Alliance Chaos is fun! And I like it because it's the only way to get that Hellcannon in there, which, if the crew doesn't get sniped right away, can be one of the best things Chaos can throw down.

I recommend you don't take a named character like Shartor as the General, as then you don't get a Command Trait.

Also if you ever want to do Matched Play, you will need Battleline units (3 of them for 1001-2000 points). You have the Ironsworn which are straight up Chaos Battleline, and the 2 units of Chaos Warriors too. That's a great core objective taking force. Put the Halberds behind the Ironsworn because they could reach over the Ironsworn's tiny bases

Dragon Ogors and a Shaggoth are excellent 'anvil' units, meaning they're very durable, and have good speed.

You also have plenty of evil dwarves to run a full Legion of Azgorh army, which you can download the compendium rules here:

You could do:

160 Tauruk (General/ Grotesque/ Armor of Bazherak)
220 Shartor
100 Daemonsmith
100 Standard Bearer
320 Drazhoath the Ashen (use your Castellan on Lammasu for this, that's what I use)

100 Fireglaives x10
100 Fireglaives x10
180 Ironsworn x 20
180 BullCentaurs x3

140 Magma Cannon (you can use your Hellcannons for these)
140 Magma Cannon

160 Allied Sorcerer Lord on Mount (make one, he can buff things really nicely, probably marked Nurgle or Slaanesh to avoid their enemy area effects and stuff)
90 Allied Chaos Warriors x5 w Halberds/shields

I think that's 1990 points. Azgorh can be pretty darn strong with a little practice, and a great spoiler army. I've had lots of fun with them, all old big hats for me

Lastly for the Daemonsmith, don't bother with the Balewind. Ashstorm has about the longest spell range in the game at 36", so you won't need that extra range. Daemonsmith needs to stay close to both Magma Cannons to extend their range to 24", and he can pop out on occasion to throw blood on the enemy for some mortal wounds too.
