So, I want to get a Deffkopta. But then I saw they're metal. METAL.
What's a good kit that would let me build a Deffkopta, that's in plastic?

Assault on Black Reach had plastic deffkoptas that were fantastic. You may be able to find some on eBay or similar?

Loot some other race's flyers and orkify them to create counts-as koptas? Or add flying engines (rockets, propellers, anti-grav gubbins, whatever) to ork bikes.
Modelling-wise, the Black Reach koptas are the simplest option, but can be difficult and expensive to find these days.

You can still find a fair few Plastic Deffkoptas from the Assault on Black Reach set on Ebay and they aren't expensive. (in the UK anyway) e.g. 3 for £20 which is meh but you will be able to get them cheaper with auctions.
They also give you lots of options for conversions, which is why I stocked up on them, these where all done with the AOBR deffkopta as the base model then converted.

If you have access to a resin 3D printer, you can use models created to represent those units on Thingiverse, e.g.:
https://www.thingiverse.com/thing:3622082
Resin isn't cheap, so expect each model to still be a couple of pounds in material and wear&tear, but you don't have to hunt for them on ebay & co.

Looting other races is always a good idea. Custodes jetbikes seem an excellent victim.
If you want something that looks more orignal Mek, get warbikes. Slice off rear wheel/track. Clip off most but not all of the front wheel struts. Slap what remains of the main body together and put on the rider as per the instructions. Take the crossbeam that normally holds the guns and ammo drum and some plasticard, or even just the exhaust pipe and chain parts (dont forget to cut off the foot pads, your rider needs those under his feet to look like hes sitting properly) to construct a raised arch that goes up from behind the rider to just about above his shoulders/head. Dont make it too tall, it should just be high enough to not have the rider bump into it every time he shifts in his seat. Take some circular elements from the rest of the kit, like bikechain gear, or one of the track wheel halves you clipped off of one of the bikes, or a hubcap from a different model and some plasticard to construct a rotor and slap that on the very top. Jam some dakkaguns or rokkits in the front in between the leftover struts.
Get a flying base. Drill a hole in the bottom of what you have done, make sure the drill tilts slightly to the back and stick the whole thing onto the flying base.
Boom.
Deffkopta.

I didn't realise GW still did anything metal...
If it weren't for the price, I'd be buying some more of these! Love metal models!

Isn't that one a Gorkamorka special character? Not every old mould was converted to resin. As others have said, you can pick up plastic ones cheaply enough - either from the Assault on Black Reach box or the Revell Warhammer 40000 Build & Paint boxes.

I’ve seen scratch built ones... a frame made from sprue. Rotors made from popsicle sticks. Some small techy bit for a motor.
