So I'm getting back into the game after a few years. Haven't played any 8th ed yet, still waiting on the rule book. My question is; say you were to play a game of 1 vs. 2 or vs. 3. What would the points ratios be like? Say you have a 3000 point list, would 3 players with 1000 points each be enough to make it evenly matched? Or would you have to up then to like 1500?

At our shop we usually allocate the same total points to both sides to keep things equal. If it isn't possible to have points equal (for what ever reason), the solution is generally to either use a mission that allows recycling casualties or let the underdogs to set up the table (within reason). Also, the Vigilus Ablaze book has an official mission for a 1 vs 2 game. If you know anyone who plays Chaos it might not hurt to give it a look to get some ideas.

Remember that the single opponent of going to have to weather 2 or more turns from his/her opponents before they have the chance to do anything, so even with even points for each side, it can get dicey for them. Especially in high points games, where the multiple players can each bring a top list. They can also drag on for a loooooong time (a single round could take over an hour or more, depending on participants and armies). I'd suggest you keep things at 2k or less. That'll ensure the multiple player side has to build to work together and should keep the timeframe somewhat more manageable.

2x1000pts is not as good as 1x 2000
it comes down to detatchments especially with elites
if you take 2 hq and 3 troops at a 100pts ish each thats half your army in mandatory choices vs a quarter the quarter therefore has a lot more flexibility in list design.
theres less room for synergy in aura bubbles
Also the two 1000pts may not fully complement each other in a way a 2000 pt would
