I would like to know how Space Marines are organised in their fleets, basically does a barge hold the entire Chapter or does each company have their own vessel?

A strike cruiser holds a company.

A battle barge holds nominally 3 companies, or 1 company with reinforced detachments
(say 2nd battle company plus 3 squads of veterans from 1st company plus 4 squads of casualty replacements and garrison from 6th reserve company plus 5 recon squads from 10th scout company)

Most chapters give each company a strike cruiser that's nominally 'theirs', but there are often (slightly) more than ten, so the surplus are general fleet units or used for detached forces, under command of the master of the fleet and/or the captain commanding a detached force.

The ships are not assigned permanently. Sometimes ships have to be refitted, and most companies are broken up into 2 - 6 squad chunks and distributed to different task forces.

One of the company captains is Master of the Fleet, in addition to being in charge of his infantry company. He is in charge of delegating ships to the different task forces, and also assigning marines to be ship captains and ships’ troops.
