I like Venomcrawlers, they are better than Defilers in terms of aesthetic and their are cheaper and easier to transport, but rulewise the Defilers seem mathematically better than Venoms in any way, they got more damage, protection, for only 10 points more, in my POV it seems a codex mistake that should be handled in CA. Anyway, regardless of the math involved, I see some tournament lists that prefer the Venomcrawlers than the Defilers, why is that? Am I missing something? I know that Venoms are smaller and faster, but is it worth the trade-off to protection and damage?

I wouldn't say Venomcrawlers are that much better better, they're simply preferred by some players.

The additional wounds on the Defiler / ability to take big guns usually doesn't make a difference. Mostly they're used them to run across the board and smash stuff up, either your opponent shoots them up with high D weapons or they don't. That favors a smaller unit that can move farther per turn.

Both units have about the same number of attacks that, on average, cause about the same number of wounds. I like the VC a little better because the claws do a flat 3 damage instead of d6, but that's just a personal preference.

The real difference between the two is the Defiler is better against high T targets, the VC is better geared towards Infantry. That's it. If you think you are going to face more boots on the ground, you might be better saving a few points.

Also vc can fire at full balistic skill when they move, defilers lose some bs due to heavy weapons. I run mine as slaanesh and bring heralds of slaanesh so they can move+advance+charge and get an additonal str on their guns, they are better suited to this roll than a defiler is.

My defilers end up in my khorne army. Nothing says threat potential like 2 defilers, a lord of skulls, a master of possession, and a warpsmith in the same army. Warpsmith can repair then master can take a wound from him and heal something an additonal 3 wounds, and the targets are just slow enough that they can keep up but fast enough to be able to hit something t2 reliably.

Its all about how you play it.

Alright, I thought about these possible strategies with the venom but I wasn't sure that the versatility was making up for the extra wounds and damage... glad you think the venom is worth it! I feel better not having bought the expensive defilers!
