I’ve been looking at some of the color shift paints available, and I noticed that they all seem to be for airbrushes. Will it look weird if I just brush it on? I have no plans to buy an airbrush any time soon.

If it's anything like the colorshift paints they use on bikes, you want an airbrush. Any unevenness in the coat is very noticeable, you get an inversion effect going on.

Not used colour-shift paint before, but I've had mixed success brush-applying various airbrush metallic paints. Building it up over as many thin layers as possible is your best bet.
