I've recently decided to get in to the hobby, I played Warhammer fantasy a VERY long time ago so I'm vaguely familiar with the general setup of the game but have never played 40k before. I've loved the lore and story for a really long time but never really had the money to actually get in to the hobby until recently as other bills had priority! But now that I can I've been wanting to get started and after researching I've decided I wanted to a do combination of Admech and Imperial Knights style of army as they're the ones that appeal to my tastes most.

My overall goal is to create a list that I like but at the same isn't absolutely horrid because I have no idea what I'm doing or how different units play out against each other or what to look out for. I've picked the three knights I want to use (Errant, Gallant, Warden) but I'm not exactly clear on how to build the smaller mechanicus armies, so what I'm hoping to get out of this forum is some guidance on what to look out for and some help with the nuances. A lot of the articles I've looked at are a few years old in some cases and it makes finding anything up to date or new pretty difficult for a new player. So any directions that can be provided to me would be greatly appreciated.

Congratulations on the opportunity to partake in the hobby! I was in a very similar position.

You are in luck. Ad-mech is getting a bunch of new models and units to flesh out the army.

I would advise you to watch some battle reports, once covid19 blows over join a local gaming group/club and get someone to play an intro game with you. In the meantime get the army book for wither or both armies and get on battle scribe app and come up with some lists.

From a pragmatic sense of army building in the current edition you want a couple HQ models, and at least 3 troops units to give you a basic "core" battalion detachment. You can then supplement that with more units or knigths or could even play mono knights.

All i would advise is pick the nits you like the look of or the lore of and what you would enjoy building, painting and playing with. At the end of the day you need to have enjoyment in the models. Unless you are planing on going top tier cut throat competitive then make your army whatever you like.
